Skinney-Thinganes has been processing lobster for decades, and the company operates two specialised lobster vessels for the season, which lasts from spring through to the autumn. All of the lobster is handled in the company’s lobster processing unit, which was upgraded in 2011. A variety of products are created from lobster for both domestic and foreign markets. Skinney-Thingnes operates a highly productive groundfish processing facility all year round. There has been a long tradition of salting seasonal fish caught just offshore from January until April. Other groundfish species are processed into fresh, frozen, or salted products. Over the last few years there has been a determined effort to utilise all the raw material that the company’s ships harvest. In order to achieve this, a wide variety of products are processed, such as swim bladders, milt and fish faces. The company operates a very productive pelagic fish processing unit, in which products are frozen for human consumption from capelin, herring and mackerel. The processing of pelagic fish is currently being upgraded. When this is complete, and the company’s 4000-tonne freezer is fully utilised, the plant’s capacity will increase to 600 tonnes every twenty-four hours.
